Indian Egg Curry is a delightful dish that combines the rich flavors of spices with the wholesome goodness of eggs. This recipe is perfect for a hearty meal and pairs wonderfully with rice, roti, or naan. Let’s dive into how you can create this delicious dish using premium spices from Indian Spice Cart.
Ingredients:
6 large eggs
2 tablespoons vegetable oil
1 large onion, finely chopped
2 tomatoes, finely chopped
1 teaspoon cumin seeds (available at Indian Spice Cart)
1 teaspoon turmeric powder (available at Indian Spice Cart)
1 teaspoon red chili powder (available at Indian Spice Cart)
1 teaspoon garam masala (available at Indian Spice Cart)
1 teaspoon coriander powder (available at Indian Spice Cart)
1 teaspoon ginger-garlic paste
Salt to taste
Fresh cilantro leaves for garnish
Instructions:
Boil the Eggs:
Place the eggs in a saucepan and cover them with water. Bring to a boil and let them cook for about 9-10 minutes. Once done, drain and transfer the eggs to a bowl of cold water. Peel the eggs and set them aside. 3. Prepare the Base:
Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them splutter for a few seconds.
3. the Onions:
Add the finely chopped onions to the pan and cook until they turn golden brown.
4. Add Ginger-Garlic Paste:
Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears. 5.Cook the Tomatoes:
Add the chopped tomatoes to the pan and cook until they become soft and mushy.
6. Spice It Up:
Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes until the spices are well combined with the tomato mixture.
7. Make the Curry:
Add about a cup of water to the pan to create the curry base. Stir well and bring it to a boil. Reduce the heat and let it simmer for about 5 minutes.
8. Add the Eggs:
Cut the boiled eggs in half and gently add them to the curry. Let them simmer in the sauce for another 5 minutes, allowing the eggs to absorb the flavors.
9. Finish with Garam Masala:
Sprinkle the garam masala over the curry and stir gently.
10. Garnish and Serve:
Garnish with fresh cilantro leaves and serve hot with rice, roti, or naan.
Tips for the Perfect Egg Curry:
Adjust the Heat: You can adjust the amount of red chili powder to make the curry more or less spicy, depending on your preference.
Consistency: If you prefer a thicker curry, let it simmer longer to reduce the liquid. For a thinner curry, add a bit more water.
Flavour Boost: For an extra burst of flavor, you can add a teaspoon of kasuri methi (dried fenugreek leaves) towards the end of the cooking process.
